OXYGEN FREE EXTRACTION
This is the first under-development anti-oxidant, slow milling lab in Greece that operates in an oxygen-free environment, reducing drastically oxidation effects. The MILESTONE® lab is equipped with in-house developed technology that maximizes the phenolic compounds found in olive oil. The MILESTONE® Technology combines traditional olive oil processing components with latest scientific research. The collected ‘Finest Cut’ corresponds to an average extraction rate that never exceeds 7%.
The ‘Finest Cut’ is collected drop by drop, following an extremely precise operation. It is a journey where only the mighty droplets make it to the surface. The natural separation procedure strengthens MILESTONE’s unique density and texture character. Our technology guarantees a significant increase in total phenols.
